Our paella is never pre-cooked: it starts with uncooked rice and is prepared slowly to order. Meat dishes and sauces are made in our kitchen, one by one, because dining out should feel worth your time.

FROM OUR FIELD

Before the kitchen,
there is the field.

Whenever the season allows, we use vegetables grown in our own field. We cannot grow everything we serve, but what the field gives us finds its way into the kitchen. The harvest changes with the season—and that is part of the character of MERGE.
